Our client is a fine dining restaurant in Lagos seeking an experienced Restaurant Manager who brings genuine expertise, high standards, and a sharp eye for detail. This is not an entry-level role. We are looking for someone who has operated at a high level and understands what it takes to deliver a consistently exceptional guest experience.

What you will do:

  • Oversee all front-of-house operations to ensure seamless, high-quality service on every cover.
  • Lead, train, and hold the service team to precise standards of conduct, presentation, and performance.
  • Manage reservations, floor plans, and guest flow with accuracy and composure.
  • Handle high-value guest relationships, complaints, and special requests with professionalism and discretion.
  • Work closely with the kitchen to ensure timing, plating standards, and menu knowledge are consistent across the team.
  • Work with the accountant on the financial performance of the restaurant, including budgeting, cost control, P&L oversight, and revenue reporting.
  • Manage food and beverage costs, stock levels, wastage, and supplier negotiations.
  • Monitor payroll, staff scheduling, and labour costs against targets.
  • Maintain compliance with health, safety, and hygiene standards at all times.
  • Report directly to ownership on financial performance, staffing, and operational priorities.

What we are looking for:

  • Minimum 5 years of experience managing a fine dining or upscale full-service restaurant, with specific experience on Lagos Island.
  • Deep knowledge of food, wine, and fine dining service standards.
  • Proven ability to recruit, lead, motivate, and develop a professional service team.
  • Strong financial acumen, including budgeting, cost management, and P&L understanding.
  • Exceptional interpersonal and communication skills, written and verbal.
  • Meticulous attention to detail across service, presentation, guest experience, and reporting.
  • Calm under pressure with strong decision-making and problem-solving ability.
  • Proficiency with restaurant POS systems and operational reporting tools.
